Cold tomato and watermelon soup

We inaugurate the cold soup season! And we start with a recipe whose base is 2 seasonal fruits that are at their best and must be taken advantage of: tomatoes and watermelon.

First, peel the watermelon and mash. Booking.

Cut the tomatoes into quarters and remove the stem (in case you don’t know it, it is the hard part where the twig or leaf of the tomato is located).

Add to the crushed watermelon, tomatoes, salt, and pepper and blend until everything is well broken up and homogeneous.

Pass through a fine mesh strainer and set aside in the refrigerator.

Now, prepare the basil oil. Cover the leaves with oil and mash.

Elaboration:

-1/2 white sweet onion

-Toad skin melon approx 2 kilos

-Grany green apples

-Clove garlic

 -Fresh mint leaves

-25 gr Italian green pepper (the tip)

-3 thin slices of cucumber without skin

-8 slices serrano ham (the better quality, the better flavor)

Lettuce Gazpacho

A very refreshing way to eat this vegetable and a very easy recipe to eat for those who find lettuce in a salad boring.

Elaboration

  • 300 g of lettuce.
  • 1 cucumber. 
  • 1 green pepper. 
  • 120 g of soy yogurt.
  • 1 clove garlic. 
  • 4 tablespoons of extra virgin olive oil.
  • 2 tablespoons of vinegar.
  • Salt.
  • 150 ml of water.

The fruits can be used in soups or various appetizers. The second courses can also be accompanied by fruits. It is very appropriate to consume them in the form of a sauce or puree.
